With an entity API key, the assistant is already scoped to one business. That means most Apollo users do not need to think about selecting entities manually.

Using an account key instead?

That also works. It is more useful for teams managing multiple entities from one account, but it requires choosing the correct entity in the MCP client or prompt flow.
